French Macaroons

Have you seen these little cookies around?

Better yet, have you tried one? These crunchy-on-the-outside, chewy-in-the-middle, little lovelies are all the rage right now in the culinary world and I'm in love with them! I decided that I want to have them at my wedding brunch, but to buy them from a bakery you'll easily spend $2-$3 PER COOKIE!... RIDICULOUS! I've read dozens of recipes and they are a very finicky thing to bake and the ingredients are expensive. So in order to get some professional instructions, I signed up with my little sister Jenny and my best friend Jocelyn to take a class. It was at Kitchen Kneads in Logan, and was taught by the chefs at Hamilton's. They did a great job, it was definitely worth my drive from Salt Lake. We had a blast learning together, and I think we will be able to make them on our own. We have about 3 months to practice for the wedding, so hopefully we can perfect the recipe before then!

After the class we stopped by one of my favorite places in Logan - The Pita Pit. I seriously crave their hummus pita, I usually have to stop there every time I go home. Anyway, the boy that helped us was actually a former student of mine. I taught piano lessons in high school and he was one of my first students. It was so fun seeing him (he's a senior in high school now), and I was even more excited when he told me that he is still playing the piano!
